There are excellent snacks but should be served immediately after frying or they lose their crispness.
Quantity: 20
Note: Panzerotti can have any filling of your choice. The size can also be varied as per your liking.
Ingredients:
½ recipe pizza dough - recipe already uploaded. 2 tbsp oil 1 cup (200 gm) boneless chicken or baby corns-cut into very small pieces 1 tsp 4 cups finely chopped spinach flakes salt, 1 tsp pepper, ½ tsp red chili 4-5 pinches grated nutmeg -1 cup grated cheese (75 gm) oil for frying
Method / Instructions:
Make pizza dough using the recipe uploaded and let it double in size.
For the filling, heat oil. Add chicken or baby corns and fry till it changes color.
Add spinach and mix for 1 minute.
Add salt, pepper, red chili flakes and nutmeg.
Cover and cook till mixture till it is dry and the chicken or baby corns are tender. Remove from fire to a bowl.
Mix in grated cheese.
Divide dough in 20 marble sized balls. Take one and roll out into a 3-4" round thin rolled dough using dry flour for dusting.
Place a little filling in the center of the rolled dough, leaving sufficient border all around for sealing the edges.
Brush the edges with a little egg white or water. Fold over and press together to seal. Keep in the fridge till serving time.
At the time of serving, deep fry 3-4 at a time, on moderate heat, until golden.
Drain on a paper napkin and serve immediately with chili-tomato sauce. Best Wishes.
