Deep Fried Prawns (in batter).

Serves: 18 - 20 prawns
Preparation time: about 15 minutes.
Ingredients:
1 kg Pacific prawns
4 egg
2 teaspoon salt
12 tablespoons plain flour
8 tablespoons water
Oil for frying
Dip:
Salt and freshly ground black pepper or crushed sesame seeds, mixed together.
Method / Instructions:
Shell the prawns but leave the tail on to be used as a handle.
Make the batter by beating the egg first, then fold in the salt, flour and water. Beat for 1 minute to incorporate some air.
Heat the oil in a deep fryer until really hot, dip each prawn in the batter then deep fry individually for 2 minutes or until golden, remove and drain on kitchen paper.
Serve with salt and pepper or crushed sesame seeds as a dip.
