TOMATO SAUCE:
250 gm tomatoes blanched (put in hot water and peeled) and chopped finely
½ cup ready made tomato puree
4-5 flakes garlic - crushed
1 tsp dried oregano
1 bay leaf
½ tsp vinegar
salt and freshly ground pepper to taste
1 tbsp oil
TOPPING:
1 onion-cut into half and then cut into thin rounds to get semi circles
½ cup tinned corn kernels or cooked fresh corn
a few slices of pickled jalapenos, (or green chillies)
10 - 15 olives - cut into slices
7 - 8 sliced mushrooms
2 small-sized capsicum, diced
150 gms mozzarella or pizza cheese - grated
1 tbsp olive oil
Method / Instructions:
Prepare the pizza base as given recipe or use 2 ready made bases.
To prepare the tomato sauce, heat 1 tbsp oil in a pan. Add garlic. Stir and immediately add all other ingredients of the sauce. Bring to a boil.
Lower heat and simmer on low heat for 10 minutes, stirring occasionally until it is reduced in quantity and thick enough to spread without being runny.
Spoon the prepared tomato sauce over each pizza base, leaving 1/2" all around the edges.
Brush the edges with olive oil.
Sprinkle 1/4 of the grated cheese on each base.
Sprinkle onions. Sprinkle some corn and jalapenos too.
Sprinkle left over mozzarella cheese. Arrange olives, mushrooms, and capsicum. Drizzle some olive oil.
Place on the wire rack of the oven (not tray) and bake at 180°C (350°F) for 15 minutes until golden and crisp.
Serve hot.
Best Wishes.
