Baked Chicken Ravioli.

Serves 10-12 Time: Preparation time 30 - 40 minutes.
Ingredients:
RAVIOLI DOUGH (PASTA):
2½ cups maida (plain flour)
3 eggs
1 tsp salt
1 tbsp oil
FILLING:
200 gm boneless chicken - chopped finely
1 cup spinach - chopped finely
2 tbsp butter
2 tsp crushed garlic
1 tsp salt
1 tsp pepper
BECHAMEL SAUCE (WHITE SAUCE):
6 tbsp butter (or ½ oil and ½ butter)
6 tbsp maida (plain flour)
5 cups milk
3 tbsp chopped parsley or fresh coriander
1 tsp salt, or adjust to taste
½ tsp white pepper, or to taste
3/4 cup grated cheese
Method / Instructions:
To prepare the ravioli dough, mix all ingredients to make a firm dough. Knead for 5-7 minutes to get a smooth, elastic and slightly glossy dough. Cover dough with a damp cloth and leave aside for 10-15 minutes in the fridge.
To prepare the filling, heat butter. Add garlic. Fry for 1 minute.
Add chicken and cook covered till chicken gets cooked and turns dry. Add spinach, salt and pepper. Cook till the filling is absolutely dry.
To prepare the ravioli, divide dough into 4 balls with greased hands. Roll out 1 ball very thinly, as thin as you can, into a 12" long and about 8" wide strip, on the kitchen platform, using corn flour for dusting.
Place a tsp of filling at a distance of 2" intervals in 2 rows on a strip of the rolled dough. Roll out the second ball to the same size and place this on top of the first one over the filling. Press down the edges and also in-between the filling. Cut between mounds of filling, using a fluted pizza cutter. Do the same with the other 2 balls.
Boil 6 cups water with 1 tsp salt in a large vessel. When it boils add half the ravioli and boil for 2-3 minutes. Remove. Repeat with the second batch.
To prepare the sauce, heat butter. Add flour. Cook on low heat for a minute.
Do not brown. Add milk gradually, mixing all the time so that no lumps are formed. Add all ingredients, except cheese, given under sauce. Give 1-2 boils. Remove from fire. Add boiled ravioli to white sauce.
Transfer to a greased baking dish. Sprinkle some cheese on top. Bake at 180°C for 15 minutes till golden.
Serve hot and garnish with parsley or any topping of choice.
